Holubtsi: Ukrainian Stuffed Cabbage

A traditional Ukrainian stuffed cabbage dish, known as holubtsi, is prepared with a savory potato-buckwheat filling.

Instructions

  1. Start boiling a large pot of salted water.

  2. Preheat oven to 350 F.

  3. Core the cabbage, place it cored-side up in boiling water, cover, and cook for 15 minutes until leaves are tender.

  4. Carefully remove the cabbage, let cool, then remove 18 whole leaves and trim thick stems from each.

  5. Chop the remaining cabbage and layer it at the bottom of a large casserole dish.

  6. Drain and press excess moisture from the potatoes.

  7. Transfer potatoes to a bowl and stir in lemon juice to prevent browning.

  8. Sauté the onion in butter until tender.

  9. Add sautéed onion to the potatoes.

  10. Thoroughly combine 1/2 cup sour cream and buckwheat with the potato mixture, then season with salt and pepper.

  11. Place about 1/2 cup filling on each cabbage leaf and roll to encase.

  12. Fold in the sides of the leaf, then continue rolling into a neat cylinder.

  13. Arrange cabbage rolls seam-side down over the chopped cabbage in the dish, seasoning each layer.

  14. Dollop remaining 1 cup sour cream over the rolls. Cover and bake for 1 to 1 1/2 hours until buckwheat is tender.
