Instructions
-
Start boiling a large pot of salted water.
-
Preheat oven to 350 F.
-
Core the cabbage, place it cored-side up in boiling water, cover, and cook for 15 minutes until leaves are tender.
-
Carefully remove the cabbage, let cool, then remove 18 whole leaves and trim thick stems from each.
-
Chop the remaining cabbage and layer it at the bottom of a large casserole dish.
-
Drain and press excess moisture from the potatoes.
-
Transfer potatoes to a bowl and stir in lemon juice to prevent browning.
-
Sauté the onion in butter until tender.
-
Add sautéed onion to the potatoes.
-
Thoroughly combine 1/2 cup sour cream and buckwheat with the potato mixture, then season with salt and pepper.
-
Place about 1/2 cup filling on each cabbage leaf and roll to encase.
-
Fold in the sides of the leaf, then continue rolling into a neat cylinder.
-
Arrange cabbage rolls seam-side down over the chopped cabbage in the dish, seasoning each layer.
-
Dollop remaining 1 cup sour cream over the rolls. Cover and bake for 1 to 1 1/2 hours until buckwheat is tender.
