Hokey Pokey Ice Cream

Instructions

  1. Line a baking tray with parchment paper.

  2. Heat sugar and golden syrup in a small saucepan over medium heat.

  3. Melt the mixture, stirring occasionally, then bring to a boil for 5-6 minutes, stirring constantly to prevent scorching.

  4. Remove the pot from heat and stir in baking soda; the mixture will froth and become pale.

  5. Scrape and pour the mixture onto the prepared tray, allowing the honeycomb to set for 30 minutes.

  6. Once set, wrap the honeycomb in parchment paper and break it into small pieces using a rolling pin.

  7. Scoop ice cream into serving bowls and sprinkle with the honeycomb.
