Instructions

  1. Combine flour and dashi soup stock or water in a bowl to create batter.

  2. Heat and oil a large skillet, then spread a scoop of batter into a thin round.

  3. Layer a handful of cabbage and bean sprouts, followed by pork slices, on the batter.

  4. Pour more batter over the layered ingredients, flip, and cook on low heat until fully cooked.

  5. Concurrently, cook yakisoba noodles and lightly season them with okonomiyaki sauce or salt.

  6. Transfer the okonomiyaki onto the yakisoba noodles, pressing firmly.

  7. Fry an egg, break the yolk, then place the okonomiyaki on top of the fried egg, pressing firmly again.

  8. Serve the okonomiyaki egg-side up.

  9. Garnish with okonomiyaki or Worcestershire sauce, mayonnaise, chopped green onion, dried bonito flakes, and aonori.

  10. Repeat for additional okonomiyaki.
