High-Protein Barley Vegetable Soup With Lentils

A hearty vegetarian barley lentil soup features whole grains, protein-rich lentils, and various healthy, high-fiber vegetables.

Instructions

  1. Spray a 4-quart saucepan with nonstick cooking spray.

  2. Sauté garlic and onion for 4 minutes, stirring.

  3. Add carrots and celery, then sauté for 3 more minutes, stirring.

  4. Stir in 6 cups vegetable broth, mushrooms, lentils, barley, tomato paste, thyme, curry powder, and bay leaf.

  5. Bring the mixture to a boil, then reduce heat and simmer for 60 to 70 minutes until lentils and barley are tender.

  6. Mix in the remaining broth, Italian parsley, lemon juice, Worcestershire sauce, salt, and pepper.

  7. Remove the bay leaf before serving.
