Instructions

  1. Soak beans overnight in 1-inch of water, or rapidly boil, cover, and set aside for 1 hour.

  2. Drain beans, then combine with chicken stock, water, ham, carrots, onions, garlic, and seasonings in a large saucepan.

  3. Simmer the mixture over low heat for 90 minutes to 2 hours, until beans are tender.

  4. Stir in mashed potatoes and simmer for an additional 5 minutes.
