Herbed Lentils With Italian Sausage Recipe

Instructions

  1. Clean lentils, place in a 2.5-quart saucepan with cold water to cover, and bring to a boil. Reduce heat to simmer and cook for 45 minutes until almost tender.

  2. Meanwhile, pierce sausages, place in a small saucepan, and cover with chicken broth. Bring broth to a gentle boil, then simmer for 40 minutes, skimming foam and fat.

  3. Once sausages are cooked, remove from heat and let rest in broth while lentils finish.

  4. Warm oil in a medium skillet, then sauté onion, celery, carrot, garlic, and sage over medium heat until onion is translucent and vegetables are tender.

  5. Drain sausages, reserving liquid. Add sautéed vegetables, salt, pepper, and tomato paste to the lentil pot; mix.

  6. Stir in 3/4 cup of the reserved sausage broth, then taste and adjust seasoning. Slice sausages and serve alongside warm lentils and vegetables.
