Herb Roasted Red Potatoes

Instructions

  1. Preheat the oven to 400°F and oil a shallow baking pan.

  2. Scrub the red-skinned potatoes, then cut them into halves or equal-sized wedges; peeling is optional.

  3. Peel and cut the onion into 6 to 8 wedges.

  4. Melt the butter with the olive oil in a small cup.

  5. In a large bowl, combine the potato wedges, onion wedges, melted butter and oil, dill weed, basil, parsley, salt, and pepper; toss to thoroughly coat.

  6. Transfer the seasoned potatoes and onions to the prepared baking pan.

  7. Roast for 30 to 40 minutes, turning occasionally, until the potatoes are tender and golden brown.
