Prepare 1 tablespoon of fresh herbs, ensuring rosemary leaves are stem-free and sage is chopped.

Wash and pat dry the potatoes, then slice them as desired or leave them whole.

Place potatoes in a mixing bowl, drizzle with olive oil, and toss to coat.

Sprinkle generously with kosher salt and toss again to distribute.
