Herb and Spice Beef Tenderloin Roast

Instructions

  1. Preheat oven to 400 F.

  2. Place the beef tenderloin on a rack in a roasting pan.

  3. Combine rosemary, thyme, garlic, nutmeg, allspice, salt, tarragon, pepper, and mustard; rub this mixture over the roast.

  4. Roast for 45-55 minutes, or until an instant-read thermometer registers 145 F.

  5. Remove the roast, tent loosely with foil, and rest for 10 minutes before slicing.
