Hearty Sausage and Tortellini Soup
A comforting tortellini soup featuring Italian sausage, various vegetables, and tomatoes, best served with Parmesan cheese.

Instructions

Brown Italian sausage in a large Dutch oven over medium heat, then remove it, reserving 1 tablespoon of drippings.

Sauté onion and garlic in the reserved drippings until the onion is translucent.

Return the sausage to the pot; add carrot, chicken stock, tomatoes, basil, and oregano. Bring to a boil, then reduce heat and simmer for 15 minutes.

Stir in zucchini and cook for 5 minutes, until vegetables are tender.

Add spinach (if desired) and tortellini, cooking for 3 to 5 minutes or according to package directions.

Serve soup with a sprinkle of Parmesan cheese.
