Instructions

  1. Cook bacon in a large saucepan until almost crisp; remove to crumble and set aside, reserving 1 teaspoon of drippings.

  2. Add leeks, diced onion, butter, and oil to the pan with drippings, then sauté for about 10 minutes until tender.

  3. Sprinkle in flour, then stir in chicken broth and potatoes, cooking until the mixture thickens.

  4. Cover and simmer on low heat for 15 minutes, or until potatoes are tender, stirring occasionally.

  5. Stir in half-and-half or whole milk and heat through.

  6. Season with chopped parsley, salt, and pepper to taste.
