Hearty Ham and Bean Soup Recipe

Instructions

  1. Start boiling the water and beans in a large saucepan or Dutch oven, then boil for 2 minutes.

  2. Remove from heat, cover, and let stand for 1 hour.

  3. Add ham, ham bone or hock, onion, carrot, celery, bay leaf, and pepper to the beans; bring mixture to a boil.

  4. Skim any foam from the surface.

  5. Reduce heat, cover, and simmer for 1.5 to 2 hours until beans are tender, adding water if needed.

  6. Remove the ham bone or hock from the soup.

  7. Dice or shred the meat and return it to the soup.

  8. Stir in tomato sauce and salt to taste; simmer for 15 minutes.

  9. Remove the bay leaf.
