Hearty Chili Beef Soup

Instructions

  1. Dice onion and bell pepper; mince garlic.

  2. Heat oil in a Dutch oven over medium heat. Brown ground beef with onion for 5 minutes until no longer pink.

  3. Stir in bell pepper, garlic, flour, chili powder, and cumin; cook for 1 minute.

  4. Add chile peppers, tomatoes, and beef stock; bring to a boil.

  5. Stir in beans, season with salt and pepper, then reduce heat to low and simmer for 15 to 20 minutes.

  6. Ladle soup into bowls; optionally garnish with parsley or cheese and serve with bread.
