Instructions

  1. Preheat the oven to 350 F and spray two 9 x 13-inch baking sheets with nonstick cooking spray.

  2. Heat a wok over medium-high heat with oil, then stir-fry shallots, garlic, and green onion briefly.

  3. Add chicken and stir-fry until nearly cooked, then mix in peanut butter, shredded carrots, green curry paste, soy sauce, sugar substitute, and lime juice.

  4. Remove the wok from heat and allow the chicken mixture to cool.

  5. To assemble, place about 1 tablespoon of the chicken mixture in the center of a wonton wrapper, wet its edges, then top with a second wet wrapper to form a star.

  6. Fold the points of the bottom wrapper over the top, and the top wrapper's points under the bottom, creating a packet.

  7. Arrange the wontons on the prepared baking sheets, spray lightly, and bake for 14 to 17 minutes until browned, turning once during cooking.
