Hasselback Sweet Potatoes

Hasselback sweet potatoes offer an extra-special side dish, surprisingly easy to prepare with butter, maple syrup, and toasted nuts.

Instructions

  1. Preheat the oven to 425 F.

  2. Line a baking dish with oiled foil.

  3. Scrub sweet potatoes; optionally peel. Stabilize round potatoes by slicing a small portion off the bottom.

  4. Place each sweet potato between two wooden spoon handles or chopsticks; make 1/8 to 1/4-inch slices without cutting through the bottom.

  5. Arrange potatoes in the pan, brush with half the melted butter, and season with salt and pepper.

  6. Bake for 10 minutes, then continue baking for 50-60 minutes, brushing with more butter every 10 minutes, until tender.

  7. While baking, toast walnuts in a dry skillet over medium heat until aromatic, stirring constantly, then remove.

  8. Remove potatoes from oven, drizzle with maple syrup, and sprinkle with toasted nuts, ensuring some gets between slices.

  9. Return to oven and bake for 5 more minutes.
