Hash Brown Latkes

Instructions

  1. Thoroughly dry shredded potatoes using a kitchen towel.

  2. Combine the dried potatoes, onion, eggs, flour, and salt in a large bowl.

  3. Heat 1/2-inch of oil in a large skillet over medium-high heat until it shimmers.

  4. Place 1/4-cup spoonfuls of the potato mixture into the hot oil, leaving excess liquid in the bowl, and gently press down; cook in batches.

  5. Fry each side for 5 to 6 minutes until golden brown, then flip.

  6. Drain the cooked latkes on paper towels, salt lightly while warm, and serve.
