Hash Brown Frittata

Instructions

  1. Preheat oven to 350 F.

  2. Heat olive oil in a large saucepan. Sauté onion and garlic for 3 minutes.

  3. Add bell pepper and potatoes; cook for 4 to 5 minutes until heated, then remove from heat.

  4. In a large bowl, whisk eggs, cream, Parmesan, salt, pepper, and thyme.

  5. Spread butter in a 9 x 13-inch baking dish. Add the cooked vegetables, then pour the egg mixture over them.

  6. Bake for 30 minutes until almost set.

  7. Top with Colby and mozzarella cheeses and bake for an additional 10 to 15 minutes until melted and lightly browned.

  8. Let stand for 3 minutes, then slice and serve.
