Hash Brown Egg Casserole

Instructions

  1. Preheat oven to 350F and spray a 9x13 inch pan with cooking spray.

  2. Whisk eggs and milk in a large bowl.

  3. Fold in hash browns, peppers, onion, garlic powder, black pepper, hot sauce (optional), and cheddar cheese.

  4. Stir in half of the cooked bacon.

  5. Pour the mixture into the prepared pan, then top with remaining bacon and Colby cheese.

  6. Cover with foil and bake for 45 minutes.

  7. Remove foil and bake 15-25 minutes more, until golden brown.

  8. Let rest 5 minutes before cutting.
