Halva: A Middle Eastern Sesame Candy

Instructions

  1. Start boiling sugar and water in a small saucepan for 1 minute.

  2. Remove from heat and stir in rosewater and saffron.

  3. In a separate medium saucepan, melt butter.

  4. Gradually add flour to the melted butter, cooking and stirring for 15-20 minutes until light golden and toasted.

  5. Reduce heat to low, then slowly incorporate the rosewater-saffron syrup, stirring until well blended, and remove from heat.

  6. Immediately pour the mixture into ramekins or onto a serving plate and make surface indentations.

  7. Cool for at least 30 minutes, then remove from ramekins or cut into pieces and serve.
