Instructions

  1. Preheat oven to 375 F (190 C).

  2. Season fish fillets with salt, pepper, and dried herbs; arrange them in a baking dish.

  3. Melt 3 tablespoons butter in a saucepan over medium-low heat. Sauté garlic and mushrooms until tender and golden.

  4. Stir in flour and cook for 2 minutes, then gradually add cream and sherry, stirring until thickened.

  5. Season the sauce with salt, pepper, and paprika to taste; spoon it over the haddock.

  6. Melt 1 tablespoon butter, combine with bread crumbs, and sprinkle over the fish and sauce.

  7. Bake for 25 minutes, or until the fish flakes easily.

  8. Optionally, sprinkle with cheese and bake for an additional 2 to 4 minutes until melted.
