Guyanese Fried Bakes

Traditional Guyanese fried bakes, also known as Trini floats, are delicious deep-fried circles of dough.

Instructions

  1. Heat oil in a deep pan to 350 F.

  2. Whisk flour, baking powder, salt, sugar, and optional cinnamon in a large bowl.

  3. Rub butter into the flour mixture until sandy, then gradually add water to form a soft dough.

  4. Knead the dough for 2-3 minutes on a floured surface, rub with oil, cover, and rest for at least 30 minutes.

  5. Knead the rested dough for 1 minute, divide into 10 equal balls, and roll each into a 3 1/2- to 4-inch disk.

  6. Fry dough disks in batches; spoon hot oil over the tops to puff them, then flip and cook until browned.

  7. Remove fried bakes, drain excess oil on paper towels, and serve hot.
