Guyanese Chicken Cook-Up Rice

Guyanese cook-up rice is a hearty one-pot meal prepared with chicken pieces and a selection of peas or beans.

Instructions

  1. Season dried chicken lightly with salt and pepper.

  2. Heat oil in a large pot over medium-high heat. Brown chicken in batches, then remove and set aside.

  3. Sauté half the onions and 2 thyme sprigs for 2 minutes until translucent.

  4. Drain peas, add to the pot, and cook for 2 minutes, stirring.

  5. Add lukewarm water to the peas as per package directions. Bring to a boil, then simmer until peas are al-dente and water is reduced.

  6. Stir in coconut milk, browned chicken, rice, remaining onions, 2 more thyme sprigs, basil, tomatoes, and green onions. Season with salt and pepper.

  7. Cover the pot and bring to a boil. Cook on high for 6-7 minutes until the rice surface is visible.

  8. Reduce heat to low, cover, and cook for 30-35 minutes until liquid is absorbed and chicken is cooked through.

  9. Let the dish rest for 10-15 minutes before serving.
