Guyanese Cheese Pie
A quick recipe for Guyanese cheese pies, similar to a quiche, with a savory filling of cheese, eggs, and milk encased in a simple pastry.

Preheat the oven to 350 F. Lightly oil two 12-cup muffin pans.

In a food processor, pulse flour, sugar, and salt, then add shortening and butter, mixing until coarse. Gradually add 3 tablespoons of water, pulsing until the dough just forms; add more water one teaspoon at a time if needed, but do not overmix.

Form the dough into a mass, wrap, and refrigerate for 30 minutes. Rest for 5 minutes before use.

Whisk eggs, milk, salt, and pepper in a large measuring cup for the filling.

On a floured surface, roll dough to 1/4-inch thickness and cut 4-inch circles. Press each circle into a muffin cup. Gather and re-roll scraps to fill all cups.

Refrigerate the pans for 10 minutes.

Fill each chilled pastry cup with cheese, then pour the whisked egg mixture almost to the top.

Bake for 25 to 30 minutes until golden. Cool pies in the pan for 5 to 6 minutes, then transfer to a wire rack to cool completely. Serve warm or at room temperature.
