Instructions

  1. Start boiling 6 cups water and 3 cups granulated sugar in a large saucepan, stirring until sugar dissolves, then remove from heat.

  2. Stir 1 tablespoon ground cardamom and 2 tablespoons rose water into the syrup and set aside.

  3. Combine 3 cups powdered milk, 1 1/2 cups all-purpose flour, and 1 1/2 teaspoons baking powder in a large bowl.

  4. Gradually add up to 1 cup heavy cream, kneading until a medium-soft, non-sticky dough forms.

  5. Lightly oil your hands, then divide the dough into walnut-sized balls, rolling each until smooth.

  6. Heat vegetable oil in a wide pan to 350 F-360 F for deep frying.

  7. Fry gulab jamun in batches, turning frequently until browned, then remove with a slotted spoon to drain excess oil.

  8. Immediately transfer fried dumplings into the rose syrup.

  9. Repeat for all dumplings and allow them to soak in the syrup for at least 2 hours before serving.
