Gulab Jamun (Indian Milk Doughnuts) Recipe
Gulab jamun are soft, fried Indian milk dumplings that are a highly popular dessert, known for their melt-in-your-mouth texture.

Instructions

Start boiling 6 cups water and 3 cups granulated sugar in a large saucepan, stirring until sugar dissolves, then remove from heat.

Stir 1 tablespoon ground cardamom and 2 tablespoons rose water into the syrup and set aside.

Combine 3 cups powdered milk, 1 1/2 cups all-purpose flour, and 1 1/2 teaspoons baking powder in a large bowl.

Gradually add up to 1 cup heavy cream, kneading until a medium-soft, non-sticky dough forms.

Lightly oil your hands, then divide the dough into walnut-sized balls, rolling each until smooth.

Heat vegetable oil in a wide pan to 350 F-360 F for deep frying.

Fry gulab jamun in batches, turning frequently until browned, then remove with a slotted spoon to drain excess oil.

Immediately transfer fried dumplings into the rose syrup.

Repeat for all dumplings and allow them to soak in the syrup for at least 2 hours before serving.
