Guacamole Salsa

Instructions

Preheat the oven to 500 F.

Roast jalapeño over an open flame until blistered, then steam it in a plastic bag for a few minutes.

Toss quartered tomatillos, garlic, and red onion with olive oil on a sheet pan; roast in the oven for 3 to 5 minutes until softened and slightly browned, then cool.

Peel and stem the jalapeño; remove seeds for a milder salsa.

Remove avocado flesh from peels and pits.

Combine jalapeño, roasted vegetables, avocado, salt, pepper, and cilantro in a food processor.

Blend ingredients, drizzling in lime juice until smooth; add water for a thinner consistency.
