Guacamole Salsa

A smooth, vibrant guacamole salsa combines favorite dips with the smoky flavor of roasted tomatillos and jalapeño.

Instructions

  1. Preheat the oven to 500 F.

  2. Roast jalapeño over an open flame until blistered, then steam it in a plastic bag for a few minutes.

  3. Toss quartered tomatillos, garlic, and red onion with olive oil on a sheet pan; roast in the oven for 3 to 5 minutes until softened and slightly browned, then cool.

  4. Peel and stem the jalapeño; remove seeds for a milder salsa.

  5. Remove avocado flesh from peels and pits.

  6. Combine jalapeño, roasted vegetables, avocado, salt, pepper, and cilantro in a food processor.

  7. Blend ingredients, drizzling in lime juice until smooth; add water for a thinner consistency.

  8. Taste and adjust seasoning, then serve.
