Instructions

  1. Combine ground veal, butter, lemon juice, salt, nutmeg, and pepper, then form into 6 patties.

  2. Whisk egg and water in a shallow bowl. Dip each patty into the egg mixture, then into breadcrumbs.

  3. Heat oil in a large skillet over medium-high heat. Brown patties in batches on both sides.

  4. Reduce heat to medium and cook for about 15 minutes, flipping occasionally, until an internal temperature of 160 F is reached.

  5. Serve the patties as a main dish or in buns.
