Ground Turkey Stir-Fry

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet (avoid nonstick) and brown the ground turkey for 5-7 minutes, breaking it apart, then set aside.

  2. Add the remaining 1 tablespoon of olive oil and diced onion to the pan; sauté for 1 minute.

  3. Stir in broccoli florets and diced red bell pepper; cook for 3-4 minutes until the vegetables soften.

  4. Add minced garlic and sauté for 1 minute more, then return the browned ground turkey to the pan.

  5. Pour in soy sauce and cook for 2 minutes, until the turkey is heated and vegetables are combined. Season with pepper, top with scallions, and serve over cooked brown rice.
