Instructions

  1. Marinate ground beef with marinade ingredients and cornstarch for 15 minutes, preparing vegetables during this time.

  2. Heat oil in a wok on high heat; stir-fry ginger for 30 seconds, then remove it.

  3. Add marinated beef to the wok and cook for 1 to 2 minutes until it changes color.

  4. Stir in chopped onion and cook for 1 to 2 minutes until softened.

  5. Reduce heat to medium, add 1 tablespoon curry powder, and stir until aromatic.

  6. Add rice, stirring to heat through and break up clumps, adding more curry powder if desired.

  7. Mix in peas and shredded carrot.

  8. Create space in the wok, scramble the beaten egg, then combine it with the rice.

  9. Stir in scallions.

  10. Season with salt and pepper as desired.
