Ground Beef and Pinto Bean Chili

A well-seasoned chili combines pinto beans, ground beef, and various vegetables with a robust blend of spices including chili powder and cumin.

Instructions

  1. Rinse pinto beans, cover with water in a large bowl, and soak overnight; drain before use.

  2. Place drained beans in a large pot, cover with water, bring to a boil, then reduce heat, cover, and simmer for 45 minutes until tender.

  3. Add tomatoes to the beans and simmer for 5 minutes; set aside.

  4. In a skillet, sauté chopped onions and bell pepper in oil until softened; add garlic and parsley and cook for 2 more minutes.

  5. In a separate skillet, brown ground beef until no longer pink, breaking it apart.

  6. Stir the sautéed onion/bell pepper mixture and chili powder into the beef, cooking for 10 minutes.

  7. Combine the beef mixture with the beans and tomatoes. Stir in ground black pepper, cumin, and salt.

  8. Cover and simmer on low heat for 1 hour. Uncover and continue cooking for 30 minutes.

  9. Skim off excess fat before serving.
