Groninger Mustard Soup
A traditional Groningen specialty, this soup highlights superb regional mustard.

Instructions

Fry bacon until crisp, then drain.

In a separate pot, sauté shallot in butter.

Add mustards and mustard seed.

Stir in flour, then slowly pour in stock to form a smooth roux; cook for 1-2 minutes.

Add cream and season with salt and pepper.

Ladle soup into bowls and garnish with crispy bacon and chopped chives, cress, or sautéed leeks.
