Groninger Mustard Soup

A traditional Groningen specialty, this soup highlights superb regional mustard.

Instructions

  1. Fry bacon until crisp, then drain.

  2. In a separate pot, sauté shallot in butter.

  3. Add mustards and mustard seed.

  4. Stir in flour, then slowly pour in stock to form a smooth roux; cook for 1-2 minutes.

  5. Add cream and season with salt and pepper.

  6. Ladle soup into bowls and garnish with crispy bacon and chopped chives, cress, or sautéed leeks.
