Grinder Sandwich Recipe

Instructions

  1. Preheat the broiler to high.

  2. Chop iceberg lettuce into 1/2-inch ribbons and thinly slice red onion; combine both in a medium bowl.

  3. Add cherry peppers, olives, sun-dried tomatoes, mayonnaise, red wine vinegar, Italian seasoning, salt, and pepper to the bowl; mix well and adjust seasoning as needed.

  4. Split the roll(s) lengthwise, keeping one side attached, and place on a rimmed baking sheet.

  5. Arrange cheese in a single layer on both halves of the open roll(s) and broil for 2 to 3 minutes until melted.

  6. Layer ham, salami, prosciutto, and tomato over the melted cheese.

  7. Top with a generous amount of the salad mixture and grated Parmesan, then close the sandwich(es).

  8. Slice in half, if desired, and serve immediately.
