Grinder Sandwich Recipe
This hearty grinder features an assortment of Italian meats and melty cheese, complemented by a crisp, creamy salad topping.

Instructions

Preheat the broiler to high.

Chop iceberg lettuce into 1/2-inch ribbons and thinly slice red onion; combine both in a medium bowl.

Add cherry peppers, olives, sun-dried tomatoes, mayonnaise, red wine vinegar, Italian seasoning, salt, and pepper to the bowl; mix well and adjust seasoning as needed.

Split the roll(s) lengthwise, keeping one side attached, and place on a rimmed baking sheet.

Arrange cheese in a single layer on both halves of the open roll(s) and broil for 2 to 3 minutes until melted.

Layer ham, salami, prosciutto, and tomato over the melted cheese.

Top with a generous amount of the salad mixture and grated Parmesan, then close the sandwich(es).

Slice in half, if desired, and serve immediately.
