Instructions

  1. Preheat a grill to medium-high heat.

  2. Trim zucchini or summer squash and cut lengthwise into halves or slices.

  3. Brush one side with olive oil and season with salt.

  4. Place the oiled side down on the grill; cook for approximately 5 minutes until grill marks form.

  5. Brush the remaining side with oil and season with salt. Flip the vegetables.

  6. Grill for an additional 5 minutes until grill marks form and the squash is very tender.

  7. Serve hot or at room temperature.
