Grilled Walleye With Citrus Butter

Instructions

  1. Preheat a gas or charcoal grill to medium heat (350-375°F).

  2. Combine butter, half of the pecans, orange juice, and chives in a small bowl; mix well.

  3. Spray a 12-inch foil square with nonstick spray or oil, then place it on the grill.

  4. Arrange walleye fillets on the foil and season with salt and pepper.

  5. Grill for 6 to 9 minutes, then top the fillets with the pecan butter. Continue grilling for 1 to 3 minutes more, until the fish reaches 140°F, butter melts, and fish flakes easily.

  6. Remove fish from heat and sprinkle with the remaining pecans before serving.
