Instructions

  1. Prepare a medium gas or charcoal grill to 350-375°F.

  2. Whisk together lemon juice, olive oil, vinegar, mustard, basil, parsley, garlic, salt, and pepper for the marinade.

  3. Combine cut vegetables with the marinade in a resealable bag or large bowl and refrigerate for 1 to 3 hours.

  4. Thread the marinated vegetables onto skewers, setting aside any leftover marinade.

  5. Grill kebabs, covered, for 10-12 minutes, rotating and brushing with the reserved marinade every 2-3 minutes, until crisp-tender with some char.

  6. Remove from grill and serve.
