Grilled Tomato Soup

A smoky tomato soup is prepared by grilling the tomatoes to impart a unique flavor before blending.

Instructions

  1. Preheat a grill to medium heat (350-375F) and oil the grates.

  2. Combine olive oil with salt and pepper. Halve tomatoes and brush their cut sides with some of this mixture, reserving the remaining olive oil.

  3. Grill tomatoes cut-side down for 3-4 minutes until browned and skins loosen, then set aside to cool.

  4. Once cooled, place a mesh strainer over a bowl. Working over the bowl, remove and discard most skins and seeds from the tomatoes, reserving the collected juices.

  5. In a small skillet, heat 1 tablespoon of olive oil. Sauté shallots until translucent (about 2 minutes), then add minced garlic and cook until fragrant (about 30 seconds).

  6. Transfer the sautéed mixture, tomatoes, reserved juices, basil, Worcestershire, Tabasco, and the remaining olive oil to a blender or food processor. Blend until smooth and adjust seasoning with salt and pepper.
