Instructions

  1. Preheat the grill to medium-high (400-475 F).

  2. Toss 1 head of cauliflower florets with 2 tablespoons olive oil, 2 teaspoons kosher salt, and 1 teaspoon chili powder in a large bowl.

  3. Grill the cauliflower for 10 minutes with the lid closed.

  4. Flip the florets and cook for another 10-15 minutes until evenly browned.

  5. Remove the cauliflower, transfer to a bowl, then toss with fresh lemon juice and garnish with chives before serving.
