Grilled Shark Steaks

Instructions

  1. Whisk together orange juice, soy sauce, ketchup, parsley or cilantro, lemon juice, garlic, pepper, salt, and red pepper flakes in a bowl.

  2. Place fish in a dish, pour marinade over, turn to coat, then cover and marinate in the refrigerator for 1 to 2 hours.

  3. Preheat a grill to medium-high heat, then oil the grates thoroughly.

  4. Remove fish from marinade, reserving it. Grill fish for 5 to 6 minutes per side, or until it reaches 145 F and flakes easily.

  5. Meanwhile, pour reserved marinade into a saucepan. Simmer on high for 2 minutes, stirring, then reduce heat to medium-low and simmer for 10 to 12 minutes. Remove from heat and cover.

  6. Remove cooked fish from the grill and serve with the warm sauce.
