Grilled Savory Pancake Bites With Octopus (Takoyaki)

Instructions

  1. Pre-cook and cut octopus into bite-sized pieces.

  2. Combine flour, dashi broth, and eggs in a large bowl to form a cream-soup-like batter.

  3. Preheat a takoyaki pan, then coat each mold with canola oil.

  4. Pour batter into molds, filling each about 3/4 full.

  5. Add octopus, red ginger, green onion, and dried red shrimp to each mold.

  6. Grill for 3 to 4 minutes, then use a pick to flip each ball.

  7. Grill the other side for 3 more minutes until golden brown.

  8. Remove browned takoyaki from the pan and plate them.

  9. Garnish with okonomiyaki sauce, mayonnaise, dried bonito flakes, and green aonori seaweed.

  10. Serve immediately.
