Grilled Savory Pancake Bites With Octopus (Takoyaki)

Instructions

Pre-cook and cut octopus into bite-sized pieces.

Combine flour, dashi broth, and eggs in a large bowl to form a cream-soup-like batter.

Preheat a takoyaki pan, then coat each mold with canola oil.

Pour batter into molds, filling each about 3/4 full.

Add octopus, red ginger, green onion, and dried red shrimp to each mold.

Grill for 3 to 4 minutes, then use a pick to flip each ball.

Grill the other side for 3 more minutes until golden brown.

Remove browned takoyaki from the pan and plate them.

Garnish with okonomiyaki sauce, mayonnaise, dried bonito flakes, and green aonori seaweed.

Serve immediately.
