Prepare a gas or charcoal grill for medium heat (350 F to 375 F).

Finely chop salmon in a food processor, then transfer it to a large bowl.

Add breadcrumbs, mayonnaise, green onion, parsley, mustard, lemon zest and juice, salt, and pepper; mix until well combined.

Shape the mixture into 8 patties, about 1/2-inch thick, and brush both sides with oil.

Clean and thoroughly oil the grill grates.

Carefully place the salmon cakes on the grill.

Cook for 3 to 4 minutes per side, until reaching an internal temperature of 145 F, then serve immediately.
