Grilled Salmon Burgers With Radicchio Slaw and Sambal Mayonnaise

Preheat grill to medium-high.

Cut salmon into 3-inch chunks; process with white green onion, almond flour, salt, white pepper, ginger, and rice wine vinegar until just combined. Pulse in green parts of green onion.

Form five patties from the salmon mixture.

Oil grill grates, then cook patties for 8-10 minutes, or until internal temperature reaches 145 F (65 C). Remove and tent with foil.

Combine shredded radicchio, carrot, rice wine vinegar, soy sauce, sesame oil, salt, and black pepper. Toss, then mix in peanuts.

Whisk together mayonnaise, sambal chile sauce, pepper, and onion powder.

Assemble burgers by spreading sambal mayonnaise on bottom buns, topping with a salmon patty and radicchio slaw, then adding top buns.
