Grilled Prime Rib Roast Recipe

Prepare the grill for indirect heat, aiming for 325 F to 350 F, and position a drip pan below where the roast will be placed.

Calculate the cooking time, allowing 12-14 minutes per pound for the roast.

Make 1/2-inch deep holes every 2 inches across the roast with a knife.

Insert garlic slivers into alternating holes and rosemary leaves into the others.

Combine black pepper, dried rosemary, salt, and paprika, then rub the mixture over the roast.

Place the seasoned roast on the oiled grill grate over the drip pan on the indirect heat side.

Cook, adding water to the drip pan as needed, until the internal temperature reaches 115 F to 125 F; use a meat thermometer for accuracy.

Remove the roast from the grill, tent loosely with foil, and let it rest for 15 to 30 minutes.
