Grilled Potato Skins Recipe

Instructions

Preheat a gas or charcoal grill to medium (350-375°F).

Combine butter, rosemary, salt, and pepper in a small bowl.

Cut potatoes in half lengthwise, then microwave for 6-7 minutes.

Hollow out the center of each potato half.

Brush the potato skins with the butter mixture.

Grill potatoes cut-side down for 5 minutes, then flip and grill for 3 more minutes.

Fill hollowed potatoes with shredded cheese and cook on the grill until melted (2-3 minutes).

Remove from grill, top with sour cream, onion, and crumbled bacon, then serve.
