Grilled Pork Ribs: Costillas de Cerdo a la Parilla
South American-style pork ribs are prepared with a vibrant spicy marinade and finished on a smoky grill.

Instructions

Remove the membrane from the ribs, then rinse, pat dry, and rub with salt and pepper.

Blend garlic, scallions, and all other marinade ingredients until smooth.

Place ribs in a dish, thoroughly coat with the marinade, cover, and refrigerate for several hours or overnight.

Preheat oven to 250 F. Wrap the marinated ribs and any remaining marinade tightly in aluminum foil, place on a baking sheet, and roast for 3 hours. Let cool slightly.

Heat a grill to medium-high (400-475 F). Oil the grill, place the unwrapped ribs on it, and cook for 6-9 minutes per side until warmed through and charred, brushing with mango glaze if using. Serve warm.

Alternatively, for grill-only cooking: Prepare a charcoal grill for indirect heat (225-250 F) with coals on one side. Sear ribs directly over coals, then move to indirect heat. Baste occasionally with marinade and cook for 3 to 3.5 hours until very tender.
