Grilled Pork Rib Roast Recipe

Instructions

  1. Preheat grill for medium-high heat.

  2. Pat the bone-in rib roast dry and place it on a large baking sheet.

  3. Combine olive oil, lemon juice, wine, and other remaining ingredients in a small bowl, letting the mixture sit for 10 minutes.

  4. Coat the entire roast with this mixture, then cover only the rib bones with aluminum foil.

  5. Place the roast on the grill over indirect heat and cook for 2 to 3 hours, or until its internal temperature reaches 145 F / 65 C.

  6. Remove from heat, tent with aluminum foil, and allow the roast to rest for 15 to 20 minutes.

  7. Carve the pork between the bones into thick pieces.
