Grilled Pork Chops With Indian Spice Rub

Instructions

  1. Grind chiles, cloves, peppercorns, mustard, and coriander seeds to a fine powder, then mix with the remaining spices.

  2. Rub the spice mixture thoroughly onto the pork chops and let them sit at room temperature for 20 minutes; if preparing ahead, refrigerate and bring to room temperature for 20-30 minutes before grilling.

  3. For charcoal grilling, arrange hot coals to cover half the grate (about two layers deep), then place and oil the cooking grate.

  4. Sear chops over direct heat for 2 minutes per side, then move to indirect heat and cook for 4-6 minutes per side, or until the internal temperature reaches 160-165 F.

  5. If using a gas grill, preheat to medium-high and cook chops for 8-9 minutes per side until they reach 160-165 F.

  6. Remove chops from the grill, cover with foil, and let rest for 5 minutes before serving.
