Instructions

  1. Preheat a well-oiled grill to medium or a grill pan to medium-high heat.

  2. Prepare pineapple by removing the crown (reserve fronds) and discarding the base slice; cut the pineapple in half through the core.

  3. Slice the halves into 1/4-inch half-moons and brush both sides with honey.

  4. Grill the pineapple slices for about 4 minutes per side until lightly charred.

  5. Cool the grilled pineapple, then cut each half-moon into three wedges, reserving one wedge per cocktail for garnish.

  6. Remove the skin from two pineapple wedges per cocktail and muddle them in a Collins glass.

  7. Fill the glass with crushed ice, then add the herbal liqueur, lime juice, and falernum.

  8. Swizzle the mixture until the glass frosts, then top with more crushed ice.

  9. Garnish with cinnamon, the reserved grilled pineapple wedge, fronds, and optionally a lime wheel or edible flower.
