Preheat a gas or charcoal grill to medium-high (400-475 F); lightly oil four large foil sheets.

In a bowl, toss potatoes with melted butter, garlic, 3 tablespoons Parmesan, Italian seasoning, salt, and pepper.

Divide seasoned potatoes among the foil sheets, seal them into packets, and place on the grill, sealed-side up.
