Grilled or Broiled Pineapple Chicken

Instructions

  1. Preheat grill to 375-400 F or broiler, then oil the grate or broiler pan.

  2. Pound chicken breasts to even thickness.

  3. Combine pineapple juice, Worcestershire sauce, soy sauce, brown sugar, and optional sambal for the marinade.

  4. Marinate chicken in the mixture for 1 to 2 hours in the refrigerator, ensuring full coating.

  5. Discard marinade. Grill chicken and optional pineapple slices over medium-high heat, turning until chicken reaches 165 F.

  6. Alternatively, broil chicken on the oiled pan 3 to 4 inches from heat for 8 to 12 minutes, turning halfway. Add optional pineapple slices then, and cook until chicken reaches 165 F.
