Instructions

  1. Heat the grill to medium-high.

  2. Whisk vinaigrette ingredients together, let sit for 30 minutes, then remove the garlic clove.

  3. Lightly brush the eggplant, zucchini, red peppers, and potatoes with olive oil.

  4. Grill vegetables for approximately 5 minutes per side until tender.
