Grilled Lamb Shashlik Kebabs

Instructions

  1. Preheat grill to medium-high heat.

  2. Combine lamb, olive oil, lemon juice, pepper, salt, and red pepper in a bowl, then marinate in the refrigerator for 2 to 3 hours.

  3. Lightly oil skewers. Thread marinated lamb (about 6 cubes per skewer) onto some, and thread vegetables onto separate skewers, alternating types.

  4. Grill lamb skewers for 10 to 12 minutes, rotating for even cooking, until desired doneness is reached.

  5. Add vegetable skewers to the grill during the last 5 minutes of lamb cooking, turning frequently until crisp-tender.

  6. Serve lamb and vegetables on skewers or a platter.
